Ingredients:
8-10 white button mushrooms
4-6 small potatoes (white or red)
Marble or mozzarella cheese
1 tablespoon butter
Salt and pepper
Optional: paprika powder
Instructions:
1 – Wash potatoes and cut half way through the middle, making sure not to cut all the way through.
2 – Fill the cut with a little butter, salt and pepper.
3 – Lightly coat a toaster oven pan with olive oil and place potatoes inside, leaving adequate room between each one.
4 – Bake at 400F for approximately 30 minutes.
5 – While potatoes are baking, wash and the remove the stems from the mushrooms.
6 – Fill the mushrooms with a piece of cheese, then sprinkle salt and pepper.
7 – Place in aluminum foil in two rows and seal tightly, making sure to leave a dome above the mushrooms.
8 – Once potatoes have been baking for 30 minutes, add mushrooms next to them to bake for another 15 minutes together.
9 – Test potatoes with skewer to see if they are soft.
